Chana masala, better known as chole masala, channay or Chholay is one of the popular dishes in the cuisine of India and Pakistan. The main ingredient is chickpeas (chana or चना called काबुली चना kabuli chana in Hindi-Urdu). It is quite dry and spicy with a squeeze of citrus. Chholay sold as snacks and street food in India and Pakistan.
Along with chickpeas, ingredients usually include onions, chopped tomatoes, coriander seeds, garlic, chilli, ginger, dried mango powder (amchur, spelled as "amchoor"), pomegranate seed powder (anardana) and garam masala.
India
This dish is very popular, especially in northern India, and especially in the region of Gujarat. In the area of Gujarat and Rajasthani, commonly cooked dry, with strong seasoning.

Aloo chole is a variety of dishes from Pakistan to Chana Masala, made with potatoes and chickpeas. In the city of Lahore, a variation called murgh cholay popular dish. This dish consists of chickpeas and chicken and is part of the traditional food of Lahore.
Ingredients
- 2 cup Chickpeas Soaked
2 medium size Onion finely chopped - 3 medium size Tomato
4-5 Curry Leaves - 4-5 Green Chillis
- 2 tablespoons, Cumin Seeds
- 3 tablespoons, Red Chilli Powder
- 1 tablespoons, Turmeric
- 1 tablespoons, dried Mango Powder
- 1 tbsp coriander powder
- 2 tbsp fresh coriander
- 2 tbsp ginger garlic paste
- 1 tbsp Garam Masala Powder
- 4 tablespoons oil
- salt to taste
- Chickpeas soaked pressure cook for 4-5 whistles or until cooked through.
- Heat oil and add cumin seeds, then add curry leaves and Green Chilli in it.
- After 1 minute of frying add Onion and garlic ginger paste and stir-fry until it turns into golden brown.
- While Cut the tomatoes in 4 pieces and Blanch's. And membumbahkannya in our onion mixture. Stir-fry until the oil begins to separate.
- Now add all the seasoning powder with Chickpeas cooked. Mix well and add a cup water and salt in it. Let cook for 5-8 minutes. Serve with chopped onion, fresh coriander and lemon on it. It feels good to Bhatura.
